Cooking these Beyond steak tips in a skillet is super easy and quick. Simply heat a lightly oiled, non-stick skillet. Cook frozen vegan steak tips for 5 minutes over medium heat, stirring frequently.

Beyond Steak tips are actually super flavorful as is. But feel free to add extra seasoning such at pepper, garlic powder, or a touch of soy sauce and toasted sesame oil for an Asian inspired flavor.

DESTEM AND MASSAGE YOUR KALE

When preparing kale for a salad, you want to take the time to destem it. Kale has a thick stem running through the center of it that, when eaten raw, is a bit of a chore to chew. So removing it is the best option.

To remove the stem of your kale, simply hold the end of the stem and run you fingers down it to gently rip the leaves of the kale of of it.

When preparing kale for a salad, you also want to massage it. Massaging your kale allows the leaves to break down and soften slightly, giving the kale a much nicer texture and making it easier to chew.

To do so, simply use your hands to gently massage the kale leaves for at least 30 seconds. This works best if you have a bit of olive oil or lemon juice coating the kale leaves.

For this recipe, you will massage the kale leaves with its dressing which includes vegan blue cheese crumbles, lemon juice, olive oil, salt and agave. This will allow the kale leaves to soften while evenly coating flavor over every bite.

Prep and roast the potatoes in advance as well.

And to make life super simple, destem and chop the kale in advance and measure out the dressing and store in a separate container.

For best results, I recommend prepping all of the elements of this recipe and storing them separately. This way you can just toss it all together in under a minute when it comes time to serve.

You can also prep the recipe completely ahead of time. Kale is a tougher green, so it can be stored with dressing on it without becoming too soggy. But again, for best results, I recommend combining ingredient right before you serve it.

Ingredients

FOR ROASTED POTATOES

  • 2 small potatoes, diced
  • 1/2 tbsp olive oil
  • 1/8 tsp sea salt
  • 1/8 tsp fresh ground pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp smoked paprika

FOR BEYOND STEAK TIPS

  • 1 cup Beyond Plant-Based Steak Tips Find in frozen section of grocery store
  • 1 shallot, sliced thin
  • 1/2 tbsp olive oil

FOR SEASONED KALE

  • 1 bunch of tuscan kale Can substitute other kale if desired
  • 1/4 cup vegan blue cheese crumbles I used Follow Your Heart vegan bleu cheese crumbles. Can substitute other cheese if desired
  • 1 lemon, juiced
  • 1 tbsp olive oil
  • 1 tsp dijon mustard
  • 1/2 tbsp agave
  • sea salt to taste

TOPPINGS

  • 1/4 cup vegan blue cheese crumbles I used Follow Your Heart vegan bleu cheese crumbles
  • 1 tbsp chives, sliced into small pieces

Instructions

PREPARE THE ROASTED POTATOES

  • Preheat oven to 400 degrees

  • Cut potatoes into small pieces

  • Toss in olive oil and seasoning

  • Lay out on a baking sheet lined with parchment paper

  • Bake for 25 minutes or until potatoes are cooked through and edges are lightly brown

  • **While potatoes are baking, move ahead to prepare the rest of the salad

  • Combine sliced shallots, 1/2 tbsp olive oil and Beyond Steak Tips in a non-stick skillet

  • Cook over medium heat for about 10 minutes, or until onions are translucent and slightly browned and Beyond Steak tips are slightly crisped on edges. Stir occasionally while cooking to prevent sticking and burning

  • Destem kale by gently removing leaves from stem. Discard stems

  • Chop kale into bite-size pieces

  • Combine kale with the rest of the ingredients listed under "Seasoned Kale" in a mixing bowl

  • Massage kale and dressing with hands for about 30 seconds or until kale has softened and is evenly coated with dressing
